Jakarta, Indonesia – bb.q Chicken has launched its first fully optimized Quick Service Restaurant (QSR) in Jakarta, enhancing efficiency while preserving its signature flavors. Indonesians prefer fried chicken with rice, prompting bb.q to shift from whole/half servings to a by-the-piece system for greater customization.
At the same time, transitioning to the QSR model was a strategic business move. Traditional dine-in restaurants require larger spaces, full kitchen setups, and higher labor costs. By streamlining operations, bb.q has reduced startup costs by 10-15%, making expansion more feasible while maintaining profitability.
Service times have dropped from 25 minutes to just 5 minutes, thanks to food warmers that keep chicken ready for immediate serving. Sauced orders are coated fresh to ensure crispiness, and chicken is held for no more than 90 minutes (fried) or 120 minutes (sauced) to maintain optimal quality. A redesigned kitchen layout further improves efficiency, supporting high-traffic locations. Since its launch, the store has averaged 600 daily customers, with the 2-piece Chicken Rice Combo emerging as the top seller.
Choosing the right location was critical to the success of this QSR model. Citywalk Sudirman, located in Jakarta’s bustling business district, proved to be the ideal choice. The area attracts a steady flow of office workers, mall-goers, and urban residents seeking quick, high-quality meals.
Beyond foot traffic, the store’s design plays a key role in attracting customers. Floor-to-ceiling glass walls provide a clear view inside, showcasing the vibrant, modern interior. Unlike traditional fast-food setups, bb.q’s green-and-gold color scheme, Seoul-inspired artwork, and playful mascot, ChiBBoQ, create a fresh, engaging atmosphere. The addition of outdoor terrace seating makes it suitable for both quick bites and relaxed gatherings.
For the first time, bb.q is offering exclusive merchandise, including branded picnic mats, water bottles, keychains, lunch boxes, and ChiBBoQ figurines.
Additionally, the store introduces CoCoCol, a new grab-and-go snack kiosk designed for mall shoppers and busy commuters. Featuring chicken nuggets, fries, cheese sticks, and drinks, CoCoCol expands bb.q’s reach beyond full meal sales, tapping into the growing demand for quick, portable snacks.
Buoyed by Citywalk Sudirman’s success, bb.q is preparing for its next opening at Pondok Indah Mall 2 (PIM2), one of Jakarta’s most prestigious shopping destinations. With a smaller footprint but higher foot traffic, this expansion will further validate the effectiveness of bb.q’s QSR model, demonstrating its ability to thrive in diverse retail environments.
